1998 1.6l golf.

I blew my engine out and got a replacement from a scrapyard and got a mechanic to fit it for me. They took months and I have finally got my car back.

As soon as I left the garage I realised there were some issues.

The speedo doesn't work, the coolant temperature gauge doesn't work and when the car is cold, it turns off unless I rev the engine.

Any advice for things I can try and look at?

Take it back to the garage who fitted the engine.

They've left something unplugged and/or damaged wiring.

Speedo wire and the sensor ground for the coolant temp sensor both run by the gearbox side of the engine bay - likely an issue around there.

exactly that they should've checked their work before handing you the key, the only right way to deal with this is to take it back and demand they fix it on the spot... PS a like for like engine swap takes max a week with them doing other jobs... not a month!
